Pineapples, spices and wild cultures. It's a Mexican dream.

Our head beer man, Stuart, put together a traditional Tepache as an adult ‘soft’ drink for one of our Beer and Cheese Festivals and it was a roaring success. With those flavours in mind he set about creating a recipe to create an X-rated version.

Hailing from South America, Tepache is a traditional Mexican fermented soft drink (about 2% abv) made from spontaneously fermented pineapples with added spices.

We used our understanding of flavour development to balance funky brett, tart lacto with a combination of sweet fruit and dry spice character to make you mambo.
