Unique Aspect

Brettanomyces is a ‘super attenuator’ and has been described as ‘anti-autolysing’. Basically it’s super hungry and never stops eating. It will metabolise many different components of wort/beer to scavenge oxygen which regular yeast cannot. This oxygen scavenging means that the initial hop character is preserved for longer.

When fresh this beer drinks like a hoppy IPA, think well seasoned chicken, curry dishes (bearing in mind that the bitterness will accentuate the spices) and Moroccan dishes for pairings.Allowed to age out, the Brett character will come to the fore, more earthy, funky, farmhouse. Perfect with root veg like beets and squashes. Also the funkier the better when paired with bloomy rinded cheese.
