Rooting Around - Summer, utilises all aspects of the cherry tree apart from the fruit. Branches in the mash tun, buds and leaves in the boil and most importantly blossom (both white and pink) post fermentation. Finally aged in ex Modus Operandi barrels with our wild cultures, this beer is bold, tart, and robust yet full of the nuances and complexities of the cherry tree.

Food Pairings
Acidity is a great flavour to pair with food, as wedo so often at the Wild Beer Co. Here it cuts through the rich umami and fat of Japanese Ramen noodle soup. Tannins and tartness prevail, while cherry notes blossom. Lean away from spicy dishes towards the savoury pork or tofu options. Extra points for creating this pairing during ‘Haname’ - the Japanese cherry blossom festival!
