Unique Aspect

Devoid of their juice we looked to extract the colourful tannins and propagate the wild yeasts and bacteria that have been fermenting natural wines for millennia. Finally we conditioned Squashed Grape in one of our first fill red wine Foudres to impart a gentle oxidation and acidity with a little more tannins to round off the dry finish.

Food Pairings

In terms of intensity Squashed Grape is balanced, nuanced and delicate despite it’s hard hitting acidity. Fruity fermentation and grape derived flavours brighten aromatic spices. Fresh summer salads with pomegranate seeds pair in with the bright acidity and fruit flavours, if there’s feta cheese for some balancing salinity even better!
