Hailing from South America, Tepache is a traditional Latin American fermented ‘soft’ drink made from spontaneously fermented pineapples flavoured with spices.

Our Wild Beer take on this classic drink de-constructs the ingredients of pineapples, muscovado sugar, cinnamon, Masa Harina corn, and wild yeast cultures. The result is a beer that delicately balances bold and strong flavours in an all too accessible drink that is born for the summer!

Unique Aspect

We successfully trialled a traditional Tepache as an adult ‘soft’ drink for one of our breweries events. It went down a storm and naturally we went about conceiving how to replicate these characters in a beer. Packed with Latin American influence, we used our understanding of flavour development to balance funky wild yeast, naturally occurring acidity, and a combination of sweet fruit with a dry spice character. Perfect as a refreshing summer drink or as a mixer with Tequila (like any good Tepache) and excellent with Mexican food.

Food Pairings

Southern America is the inspiration behind this beer, so it makes sense that Southern American food makes a perfect pairing at dinner. Chorizo sausage with refried beans on corn tacos is perfect. Add lime, sour cream, and coriander to top it off. Spicy sausage compliments with the spices in the beer, refried beans are cut by the brisk acidity, lime provides a contrast to the earthy, fermented pineapple character.
