Yadokai was originally a mass collaboration with Black Friars and Hanging Bat in Edinburgh, Nanban in London and ourselves - bringing chefs, bars and breweries together to create something incredible. The result is a Sake-inspired beer brewed with Scottish and Japanese ingredients at our farmhouse brewery in Somerset!

Unique Aspect

Directly inspired by the flavours of Sake, made using both Japanese and Scottish ingredients but brewed in Somerset at the Wild Beer Co. Yadokai is brewed with a large amount of flaked rice and fermented with the Wild Beer Co’s house Saison yeast strain.
Brewed using Scottish sea buckthorn added along with yuzu juice, which is a powerful Japanese citrus, and 2 types of seaweed. Hijiki and Konbu, to give a savoury umami note to the beer.

Food Pairings

Yadokai has so many elements to pair with from sharp yuzu to sweet alcohol to seaweed umami.Umami is the defining character of the beer and as such umami dishes, particularly Asian-inspired, compliment incredibly well. Pair up with Ramen, Okonomiyaki, Tacoyaki, Gyoza for lots of complimentary flavours while the beer lifts the fattiness associated with these dishes
