The secret to Squashed Grape's complex flavour (and rosé colour) is the grape must. In this year's brew, we took Triomphe d'Alsace grapes and foot stomped them at the brewery.
The juice went off into one project and the must into one of our tanks for Squashed Grape.

Unique Aspect
After using 800kg of foot stomped grapes, we brewed onto the skins to extract the colourful tannins and propagate the wild yeasts and bacteria that have been fermenting natural wines for millennia. It was fermented very warm to allow the natural cultures to thrive and lactic acid starts to develop. We then moved Squashed Grape into one of our Foudres to impart a gentle oxidisation and acidity from the natural Somerset cultures with a little more tannin to round off the dry finish. Look out for a rich, fruity flavour of plums and red grapes, and a good body and mouthfeel, with dry tannins and sharp balanced acidity.

Food Pairings
Fruity fermentation and grape derived flavours brighten aromatic spices. Fresh summer salads with pomegranate seeds pair in with the bright acidity and fruit flavours, if there’s feta cheese for some balancing salinity even better!
