Herbal flavours can be fresh and pungent, or can be subtly hidden in the background. Herbs are extremely versatile and delicate yet balancing these flavours can be difficult, as it's easy to create something that is over-powering or that clashes with other flavours.
We have used cucumber and mint to create beautifully cool, summer flavours, whilst also using more exotic herbs like kaffir lime leaves with lemongrass to balance prickly spice. Just like with cooking, herbs are used to complement a dish and by using inspiration from food, we are able to know what ingredients will work well together.
