Ageing in oak barrels brings complexity to our beers.
At Wild Beer our barrels are hands down the favourite toys at the brewery. Now boasting over 600 oak barrels and 4 Napa Valley Foudres (massive, oak ex-wine vats) we use a huge variety of: red & white wine, bourbon, single malt, port, rum, tequila, cider brandy, dessert wine and sherry barrels.
The woody complexity of beers like Modus Operandi is achieved by ageing the beer in barrels, with each batch sampled painstakingly to identify the flavours that blend well. Pitching in our favourite brettanomyces wild-yeasts develops the beer by re-fermenting it in the barrel, allowing the porous nature of the wood to instill a sour cherry flavour that makes this beer so unique.
