Umami is the Japanese word for 'delicious' and is commonly referred to as the 5th flavour. The flavour derives from savoury foods such as parmesan cheese, mushrooms, soy sauce, and seaweed. The umami taste is caused by the detection of glutamic acid, a naturally occurring amino acid which is also found in modi-sodium glutamate, the artificial flavour enhancer.
