Fruitbooter starts its life as a pink peppercorn Saison, we then add a careful selection of barrels from our oak library to intensify and enhance the tart flavours. After its initial fermentation, we add about a ton of fresh Somerset raspberries to ferment on top of the Saison and infuse the beer with the berries to create the sweet, acidic and mouthwatering aspect Fruitbooter is known for.
Fruitbooter was initially conceived when we were adding the raspberries to our raspberry stout Jambo, and trialled adding them to a batch of Schnoodlepip we had in barrel. The result? An incredibly spiced, acidic and fruity beer which we loved! We really liked working with raspberries as we feel their flavour and aroma provide another layer to complement the beer but not masking its complexity.
Fruitbooter ferments using our house yeast cultures to heighten and bring together the acidity of the beer. This, alongside the natural bacteria and yeasts of the fruit gives the beer its sour and Wild nature.
This is the perfect summer drink; it’s sparkling, refreshing, sour and fruity with a slight kick. It is a vital part of our upcoming fruit series alongside newly released Tepache (read about it here). Fruitbooter is essential for anyone wanting to get into craft beer or for those that love the complexity a fruit-based beer provides.
We recommend pairing this beer with a sweet chocolate fudge cake. The raspberry beautifully marries with the sweetness of the cake whilst cutting through the rich chocolate.
