Our brand new Wild IPA is the culmination of 8 years of mixed-fermentation learnings at the Wild Beer Co.
Fermented with our unique 3 yeast blend which provides the beer with a level of acidity that cuts through rich food and a complimentary pink grapefruit hop note from the Talus hops. It is balanced with a dry finish and a low but moreish bitterness.
Every step of the recipe development has considered the relationship with food, which has been extensively tested on many different cuisines!
No other beer pairs with food quite like Wild IPA.
'I first held a Beer & Food pairing dinner in a gastro-pub I managed in 2003 and in one way or another have been preaching the message of beer and food pairing ever since. My message has always been about specifics, this style, works with this food, it hasn't been about an all-rounder.
Around 10 years ago, I walked into a Michelin starred restaurant to try and sell them some beer. They had a very small range of multi-national brands on their list and I wanted to introduce them to various different beer styles. I tried to excite them with stories of how a sour beer would work with one of their starters, and how the ESB-style beer I had would work with their lamb dish, but they weren’t remotely interested. “I don’t want beer bottles on my table and we pair wine with our food” was pretty much his answer.
It was an encounter that stuck with me and became part of our mission at Wild Beer. We wanted to create beers that excited the palate, pair well with food, and look great on any table!
I love pairing Modus Operandi with red meat dishes and Sleeping Lemons with seafood, but to create a beer in a popular style that would be a good all-rounder, now that is the sort of challenge to get us really excited. Over the last 8 years at Wild Beer we have tried to make versions of this beer, without ever quite getting the brief right, and therefore not getting the beer right.
This time I think we have created the beer we have always been after; using the knowledge we have acquired to find a unique house blend of yeasts, creating the right levels of acidity, dryness, mouthfeel and flavour.'
